I am up and running! I am pretty sure I figured out what the issue was. Oh man, this is embarrassing...
So, I used the Terminal on my Mac to ssh into the server. However, what I didn't know is that I must have somehow lost the connection either from being away from the computer for too long and/or letting the computer go to sleep. So, when I would go back to continue with the tutorial I was no longer connected to the server, and thus when I was running the command I would see the error. I dunno, I think that's what happened. Anyway, that's my story and I'm sticking to it!
@djcyry you don't have to change proxy_pass http://127.0.0.1:4567 to add your IP... leave it as it is
if you add the server block in a .conf file under /etc/nginx/conf.d, then you don't need to add it in /etc/nginx/sites-available/default and

So what I ended up doing was converting from Apache2 to Nginx and created a server entry for nodebb with SSL. I'm thinking it was primarily the SSL and lack of server block for nodebb causing the forums.example.com to redirect back to example.com
no need for a server block if they are running independently. I wouldn't recommend both on the same server for other reasons, but there is no reason for them to conflict.
