There's no such thing as content moderation on the Fediverse. Every instance does things differently. You're on mastodon.social; I'm not on .social, but I am on Mastodon, on a different instance, that has different moderation rules and different social expectations, just like any subculture or club in real life.
For example, I also have a tooot.im account, in Hebrew; and the rules on that one are wildly different to both .social and tech.lgbt.
But you don't need to worry about this. You need to worry only about the rules in your own instance, the ones you were asked to read when signing up. If something doesn't appear there, it's not a rule. And if it does, it might not be a rule on a different instance.

Just like was it was said before, you do you. #Mastodon does not limit the number of hashtags you can use. When I use hashtags, I capitalize each word so it is easier to read. If someone mutes you or blocks you for that, then it is probably someone you don't want to waste time on.

Developers could make a Fediverse host app with the ActivityPub protocol and common features to the app (notifications, messaging, ...) and developers of each platform or third party developers could make the child apps (mastodon, Pixelfed, loops, ...). They would only take care of displaying the feed in a different way while the superapp takes care of the everything around that, the UI, settings menu

The promise of the Fediverse is that you choose what instance you're on: you can find instances for any point on the political spectrum. Yes, there are even MAGA instances if that's what you want.
Your free speech, by definition, cannot be violated on the Fediverse: at worst, you'll simply be kicked out, just like any real-world club. But there are other clubs, other instances, always.
I haven't violated your free speech by telling you how the Fediverse works. I do not have authority to affect you in any way whatsoever, and even if I did, I am not the government. I've given you information: it is your choice what you want to do with it.
Even if I wanted, I couldn't prevent you from saying anything, and even if I could, that wouldn't be a violation of your right to free speech, as I am not the government.

Not talking about the right to free speech. I’m talking about apparent content moderation on Mastodon. Here’s a tip for you. If you don’t like someone’s hashtag, move on! Don’t tell them it’s “unacceptable” to post hashtags and accuse them of spamming. Not a good look and these apps will quickly fade away.

Such software exists, but it's really more a "base software" and plugins that implement different features on top of it. Problem, the UI of these apps tends to become extremely cluttered and overwhelming quickly, so a lot of people prefer the simplicity and ease of use of Mastodon and Pixelfed.
Could check out Hubzilla, (streams), and Bonfire if you want an all-in-one experience.

You have a point. The top post was a tip for searching Videos on Mastodon, but if they are looking for a picture/video app then Pixelfed maybe more appropriate. Added links to Pixelfed and Loops to the top thread.

Could you use a filter to put anything sensitive behind a warning?

No generally, but if you start searching for pictures and video it will appear in the results. Using the -is:sensitive modifier works very well to filter it out.
