Standing desks...

Yeah, I have one in my home office. It might seem counterintuitive, but I feel more refreshed at the end of the day than I would with a "normal" desk. I also pair it with an under-desk treadmill, mainly during zoomcalls. It's quite useful since it feels like I spend most of my day on calls these days.

No need to go all in. Why not have best of both worlds!
A sitting level desk and a standing desk. Rather than one that goes up and down. That is neat and handy especially in a work shop but I would want more than one desk in that scenario. In fact have various desk for different tasks is great. This is of course all job type dependant.
You can also consider (search) for a wobble stool or perch chair (semi-saddle like) for the higher desk if you find yourself hunching.
Having at least two heights to allow you alternate quickly between task without having to brrrr up and brrrr down, is good for having physical cue to move the body by flexing between postures.
Also some people walk and talk better, i.e. thinking on their feet.

I've used a bar-height table and barstool as a desk for many years. It's the perfect height for either sitting or standing, so it's easy to alternate whenever you feel like it. I've had various issues with my back and wrists over the years, I find it helps a great deal. And I get to feel like I'm at the bar all the time, lol

The reach for more sugar-caffeine solutions becomes instinctually but is overall a slippery slope, you ahoy have ot look at the size of the industry.
Trying ot take irregular walk breaks, for 10 mins, maybe after eating might help - this reminds me, when I worked in a very early job doing some design work, many had smoking breaks, at least a couple a'times a day maybe more, as a non-smoker I too took those smoking breaks!
Overall sitting is not great for our bodies. Bottom line, it eventually catches up. I think everyone starts to hit this by 30's who've been sitting most of life, think about it, we've been sitting in school, college and then work, a life of sitting around with more sitting required as time goes on.
