Realized that for first time admins, they tend to not know exactly where to start.. I think our wiki is too developer oriented and a couple of wiki pages describing how to do simple things like edit categories etc would be pretty useful (Y)

If you need a tutorial on how to "edit categories," that's one indication that the interface is not very intuitive.

@psychobunny I can write a wiki page on how to install NodeBB and MongoDB, but I still don't know how to remove categories Anyways, while I'm brushing up my JavaScript knowledge, I will try to contribute to the wiki as much as possible.

Is it really that simple? Now I'm embarrassed... But, going along with what @planner said and @psychobunny pointed out, this is a very developer centered forum software with an initially steep learning curve. It's not quite plug and play. I recommend something like Foundation's Joyride to introduce new users to the system.
Update: But currently, there is no way to remove them completely (unless a forum restart is required or override them). That's a feature I'd love to see.
