I’ve subbed out the eggs for Just Egg, which works well too
My sauce is like, half sambal
If you don’t have sambal matah, you can also use the Lao gan ma tomato chilli jar. Just don’t use the rooster brand sambal oelek, that makes everything too sour to me

@skinnylatte does that get all stirred up, do you build bites of everything, or you eat things kinda separately?

@dave whatever you want! I just do bites of everything but I’m probably the odd one out

@dave you’re also supposed to mix the tomato and egg, but I’m not familiar with the texture of the vegan just egg after scrambling. Felt better to keep it apart
