My theory is that the internet is awash with bad recipes, and everyone’s a better baker than you think

@skinnylatte Oh yeah. I switch from using a measuring cup to weighing my recipes and all of them immediately got better.

All the recipes there are pretty good but I’ve had very good luck with all of PJ’s recipes specifically

Ambient temp/humidity make a huge difference. Sourdough is affected by the season.

@Littlebobbytables I just want bread, not a pet (sourdough starter) and a cult (the sourdough cult). I also don’t love super crusty and hard breads, so that’s just a bread making style that I don’t care for personally. I like yeast!

If the recipe starts with 800 words on how emotionally or spiritually important the recipe is to the writer, you’ve lost me.

@JoeBeam haha, King Arthur usually does 50 words of factual intros to each recipe. Much better

I believe you, but no recipe has ever failed me so completely as king Arthur's pizza dough. (I am a pretty good, but not great, baker). (Checking it, it is not by pj hamel; it's the 00 one, no named author)
