I'm enjoying this exploration of the history, variations, etc of Bolognese sauce. I know this can be a sensitive topic to some. I try to be less dogmatic about "one true" this and that with food as I grow up for many reasons. #food #FoodHistory #Italy

@[email protected] As a Bologna citizen from the countryside, each time I get some pasta with ragù in the city I find that they use to make it a little too meaty for my personal taste, I'm more used to a "wetter" ragù where you can appreciate the vegetables a little more.
HOWEVER, I'll never understand the need to put olive oil with pancetta, which is literal animal fat -
@fdrc_ff I never understood that either. The fat should render out fast enough and a lot of it. I usually skip the added oil step too.
