every ceramic-top resistive stove i've ever used has been a nightmare to stir-fry on because it can only maintain 100% duty cycle output on high for a couple minutes. then it traps too much heat underneath and starts cycling
i realize my use case might be unusual here but for me that's an embarrassing, critical design flaw. if it can't hold max power 24/7 you fucked up

@wohali i think i'd love a really good, well designed induction stove, i've just never met one. they're currently at the "lying to us" stage of product development where good ones exist for absurd amounts of money and then they cut them down into garbage that shouldn't even exist to sell for lower prices so they can lie and say their technology is affordable

@aud @wohali those ones seem to be the worst for having undersized coils that don't heat the whole pan
which may be an inherent limitation? a lot of them pull close to max power from the outlet so honestly it's possible you just can't make a good portable single-element stove (at least with US voltages and currents)
but idk they work if you're using a small pan.

It's also like... I mean, except for what hits the visible light spectrum, the "heating efficiency" of a resistive coil is REALLY HIGH since heat is generally the waste anyway, right? I wonder what the efficiency for an induction unit is.
ALSO: you explained why the hell the ceramic/glass top units ALWAYS FUCKING JUST STOP despite me wanting MAXIMUM NON STOP POWER. I always wondered why the hell they'd have to stop for a few seconds. So frustrating for cooking. -

@[email protected] @[email protected] In Barcelona, our unit had a glass top and that... was... really good? I was shocked to find I could use the wok on it in a way similar to a gas stove in the US. Back here in the US, the water takes ages to boil (I haven't grabbed an electric kettle, which is normally a must have for me but I'm on a budget at the moment so a stove top gooseneck it is) and I'm already like HEAT DAMN YOU.

Because even if I'm mistaken, that motherfucker deserves way more blame than he gets, so I'm blaming Thomas Fucking Edison for this.
Incidentally it's also why I had to leave some rather nice appliances behind and I admit to some degree of saltiness over it. -

but what the fuck?! One thing I don't understand about high rises: WHY ARE THEY BUILT LIKE SHIT. We were living in a new-ish high rise in Brooklyn and it was built like a complete fucking piece of garbage. It had one of those "efficiency ratings" signs on the outside and it was a C. Our air conditioners looked like they had been hauled out of a storage unit from Jersey that had held them since 1980 and the building was under a decade old. It had no excuse for being that shit. Also, don't ask about the rent, you already know the answer. -
