Is it possible to change the font colour for categories and subcategories? Or is this embedded into my theme?
Your idea is to use the color of the category for the title?
You could override those specific elements from the Custom CSS tab in the ACP.
You can do this in the custom HTML section... wrap it in <script></script>
An HTML widget might also work.
