- The official Mastodon site's server list is at https://joinmastodon.org/servers and its requirements for being listed are at https://joinmastodon.org/covenant
- I run an unofficial server list at https://fedi.garden and its requirements are at https://fedi.garden/about-this-site
It's a bad idea to use automated non-curated server lists as they do not have requirements, so they may contain unreliable or unsafe servers.

There's not a "default" server as such, but I'm guessing you mean mastodon.social?
There are lots of reasons why joining mastodon.social is a bad idea:
