I like this combination, although I've often had more success with Asian chefs trained in French cooking than the other way around.
Fusion is usually done well when it's equally aware of both cuisines.

@skinnylatte I'm skeptical of most fusion cuisine but there used to be a wonderful place called Skool in the design district. The chefs were Japanese and the front of house were Americans.

I’ve had very high end French chefs do Asian fusion and it’s not.. very good (even Crenn can’t pull it off). Worst baos I ever had. Great meal (the not Asian parts) otherwise
