Things Mastodon Has that GoToSocial Doesn't:
- The Ability to Edit Posts
- Trends (trending hashtags)
- A Post UI built into the platform (GTS requires a third-party UI for this like Phanpy, Elk, Tusky, Semaphore, etc)
- Full-text search of Public posts (optional)
Things GoToSocial Has That Mastodon Doesn't:
- Interaction Policies (Reply Control)
- Federation Thread Crawling, to Fill out Missing Replies
- RSS feeds disabled by default, can be opted-in at a per-user level, you can control whether or not just Public or Public + Unlisted (Mastodon default) are included in the RSS feeds.
- Visibility of Unlisted posts via HTML is disabled by default, you can also disable all HTML visibility of Public posts, too. (you can't do either in Mastodon)
- You can enable Markdown support for posts (available in Mastodon only in Glitch fork)
- Authorized Fetch enabled by default (this is off by default on Mastodon)
- 5000 character default for post limits, configurable (500 on vanilla Mastodon, not configurable)
- 6 max poll items, configurable (Not configurable on vanilla Mastodon)
- 6 max media items, configurable
- Poll option max characters, configurable
- Custom CSS for Profiles (Optional)
- Spam Filtering Mode
That's just off the top of my head.

Removed a 'coming soon' entry, which isn't really a fair comparison.
