I was genuinely thinking that it seems like the kind of viral ad a smart (or terminally online) marketing department might come up with.

I would agree it’s not insensitive. However, if it’s making fun of advertising, why use the actual stylized brand name?
Because that's what makes it funny.
Any real brand would work, but "Have a Let's
Brand Potato Chip" reminds you that it's fake. By having a real brand you have that brief moment of confusion before realizing it must be fake, but it's funny to think about the "what if".
If it is real advertising, then kudos to Cinnabon for being early to the game. It will be like Branded Twitter accounts where Wendy's capitalized early, it was funny, but now no one cares.
