Every time I see a recipe for Teriyaki Sauce on a Western website it seems like they’ve gotten yet more unhinged and detached from how you actually make Teriyaki sauce
For context: Real/Traditional Teriyaki Sauce is just equal parts soy sauce, cooking sake and mirin, plus brown sugar to taste.

Oh yeah: Traditional teriyaki sauce isn’t particularly thick; add extra sugar and cook it to thicken it. Or go non-traditional and add a little cornstarch slurry, I’m not a cop.
