The other day someone asked me what hot sauces and sambal we buy in Southeast Asia if I am so often complaining about the ones here and I was like, that’s probably it: none? Everything is homemade usually!
The jars of sambal I might buy are specifically made for people going abroad who don’t have homemade stuff, not stuff we would buy over there hehe

@skinnylatte I remember when I was studying in Australia the mother of my Indonesian classmate gave me a bottle of her homemade chili garlic sauce. It was the best I'd ever tasted, and nothing I've tasted from store-bought has ever come close.

@skinnylatte Can you freeze any of it? So you could spend a few exhausting days for weeks or months of easy meals?

@pixiecata I lived with this auntie in Jakarta who would make a different sambal every day for lunch. To match the dish she was making that day. It was wondrous.

@CStamp thinking about doing that. I find it very challenging to eat previously frozen foods as I am not used to it, but cooking this way is not sustainable in this part of the world as well. So I will probably have the think of some meal prep ideas that suit how and what I want to eat.
