Black bean noodles. I don’t love the northern Chinese taste profile so I often make it very southern / Hakka with extra chillies and anchovies

@johnmark they do make great noodles, but I am also partial to southern style noodles with much more complex soups and sides

I believe Koreans have their own version as well?

@ada black bean noodles is a northern Chinese dish. Northern Chinese food is quite simple, a lot of wheat and meat and vinegar. Southern Chinese food is more rice based. When we have noodles at all it tastes more complex to me with more than one source of umami, and more seafood. Korean black bean noodles are based on the northern Chinese style but totally its own thing. Kind of thicker and sweeter

@ada I pretty much made a fusion southern dish by adding an egg and chillies and anchovies. It’s mixed with a Hakka dish called ‘chilli pan mee’. The noodles are the same
