How much control do I have over what I'm able to display/hide from unauthenticated users?

I've disabled account registrations and users are only able to log in via custom SSO. I was wondering what controls I have over what gets displayed/hidden to unregistered users. For example, do I have the option to hide the username, topic content, categories etc. to those accessing our forums site which aren't logged in?

You can manage the categories permissions throught Administration Control Panel in order to hide it from unregistered users. Maybe theres some more options there.
