I just want to ask whether it is possible to have one NodeBB instance running on a machine that is responding to multiple domains.

To clarify:
2 domains: nodeForum.com and jsForum.com
Is it possible to have chat and comments coming from users that are served on both domains.

@julian True. Running as admin is what allowed me to view emails despite being hidden. Emails are hidden when viewing the profile as an unprivileged user.
