@skinnylatte In spirit, it reminded me of southern American chicken & dumplings (read: chikkin ’n dumplins). Just SUCH a comfort food, and easy on my notoriously picky stomach.

I come from two great congee cultures (Teochew and Hokkien) and that mostly just means I like every style of congee from everywhere -
Having stopped drinking coffee now for several months and substituting tea instead, I feel like I’m starting to gain enough knowledge to do tea reviews.Having stopped drinking coffee now for several months and substituting tea instead, I feel like I’m starting to gain enough knowledge to do tea reviews. One of the coolest things about tea is that, unlike coffee, one variety is so VERY different from the next as to be an entirely different beverage. Irish breakfast tea is not the same at all as green tea, which is itself different from oolong. Not to mention herbal teas, which are an adventure in decaf whereas decaf coffee is just...weak coffee.

It was an instant pot recipe so I don’t know if that makes it less authentic, but GOD it was amazing. Even just with salt & pepper. I’m going to branch out & try other toppings next!
