Thank you, I ran pkg update && pkg upgrade and service nodebb restart and now nodebb is able to install plugins.
The redis issue seems to be more a pkg related issue. Searching around, it seems it does happen sometimes, and pwd_mkdb /etc/master.passwd fixes it.

This is a very interesting thread and I would love to see @xiehan's idea come into fruition. Going forward I believe more and more sites will add a forum feature to their already existing site rather than running it separately so a seamless integration becomes the more vital. @Xiehan I would also love to know what you guys have done to overcome some of these limitations?

I'm just giving a most important tip here. "Don't use docker for production before you know how to deal with a concept of a temporary container" but GOOD FOR TEST AND LEARN.
Thanks for the positive answer, it was fun playing around with docker. I ended up realizing the most simple solution was just to share one redis db, duh right. It was good to play around with docker though I did learn a bit.
