Unless you're making it with cashews or nuts, vegan cheese isn't even food.

@oliphant You are 100% correct. There was a time when we thought my daughter was lactose intolerant, so we had tried some pizza with vegan cheese, and like you, immediately regretted it.

I don't do it with "vegan cheese" you buy from the store, that's for certain. Bleh.

@steve Vegans (like myself) don't like to admit this but when new vegans ask me how I get over cravings for cheese, I recommend making lasagna or stuffed shells with vegan ricotta--but otherwise just "get over it" and make things reminiscent of cheese, pasta in a "cheesy" sauce, but don't expect "cheese."
There are online recipes for vegan cheese that are routinely better than Daiya or just about anything else you can buy off the shelf.
Otoh, because of the ingredients involved and the methods used, I'll bet something like this is really good:

Historically I've greatly preferred hard cheese over soft cheese, but this might be the first soft cheese I actually like. I was able to eat it by itself, not only mixed with other things. So that's a real achievement!
One issue is that my partner is allergic to cashews, so I'm going to have to keep searching for more options.

I'm gradually phasing out dairy to move towards becoming #vegan. The last straw for me was the dire mishandling of avian flu, where they're not even bothering to test the cows or human workers as the outbreak spreads. Since H5N1 was detected in cows in March 2024, I arbitrarily decided to stop eating dairy products produced after February. And there's always the seed option: sunflower seeds, etc, as a base. That's a bit less common, though.

@diedofheartbreak Yeah, my favorite pasta alfredo recipe uses coconut milk, garlic, salt, lots of pepper, some dijon mustard, and a fairly large amount (1/4 cup) of nooch.
It's excellent.
